All The Recipes We’ve Loved Lately

I thought I’d kick the new week off with a list of all our favorite recent recipes! Ever since COVID lockdown, I’ve become positively obsessed with cooking. During my lunch break midday, you’ll inevitably find me devouring my favorite cooking shows (pun unintended) on YouTube, and I’ve been hard at work in our own unofficial test kitchen whipping up Thai-inspired dinners, fun seasoned meatball lunches (my favorite way to reduce our lunch meat intake), and all sorts of delicious burger varieties, too.

Just a quick note that John and I almost exclusively eat chicken since we tend to shy away from red meat (and I don’t like seafood), but we truly don’t miss beef one bit. There are so many fun ways to spice up boring chicken, both literally and figuratively, and I thought it might be fun to share exactly how we do that with a list of our go-to recipes. All The Recipes We’ve Loved Lately:

1. Lemony Chicken With Red Onion And Brussels: This is my current favorite “sheet pan” dinner to make. I have a note on my recipes list to not forget the cheese at the end because I always do. That said, if you do forget the cheese, it’s still soooooo delicious.

2. Hawaiian Chicken Burgers: We made this recipe for the first time last night, and it’s amazing! As I said, we hardly ever eat red meat, so we generally always make chicken burgers at home. I love how the curry-inspired spices jazz this chicken burger up so that you don’t miss the beef.

3. Bacon-Fried Potato Salad with Chèvre: This was one of my favorite recipes over the summer. It’s somehow still light and refreshing despite the bacon element, and is really bright thanks to the macerated onions. It’s my new go-to if I’m ever asked to bring an appetizer to a get-together, whether it’s summertime or not.

4. Chicken Stew and Dumplings: Wow, wow, wow!!! This is now the only chicken stew I’ll ever make because the dumpling recipe that goes with it is so delicious and tastes so homemade (and that’s because it is—there’s no processed canned biscuit dough used here).

5. Coconut Rice: The Ginger Peanut Chicken in this recipe is awesome, but I save it mostly to revisit the specific instructions the author shares for making coconut rice. It’s actually the only kind of rice I make now! I add a ton of lime juice and zest at the end, by the way, and extra water at that point, too, so it’s extra creamy.

6. Pasta Alla Vodka: Mom and I were just talking through our holiday menu plans, and we remembered that I served this last year at Christmas dinner. It was a hit, and so simple to throw together for a gathering, so I’ll be doing this one again. We can serve it vegetarian first for my sister, then add sautéed chicken bites on top for the rest of us meat-eaters.

7. Crispy Sesame Chicken with a Sticky Asian Sauce: Here’s the recipe you see pictured in today’s post! John and I had been on the hunt for a good sesame chicken recipe that tastes like takeout, and this is hands-down the closest we’ve gotten. It’s delicious, and frying the chicken was a cinch in our new Titanium Always Pan® Pro.

8. Chicken Caesar Pasta Salad: I’ve saved the best for last. I saw this recipe on the Food 52 YouTube channel over the summer, and have made it probably four or five times since then. It’s incredible! So light and refreshing.
